
From today there are a group of 5000 Britonians who are going to be living on just £1 per day as they partake in the campaign by the global poverty project. The article I read on BBC gives some delicious recipes for meals which do not cost more than £1 and they are healthy too! The question that this campaign and the participants have faced is whether or not it is possible to live healthily on £1 a day; with these delicious recipes it definitely looks possible!
This could also inspire us all to have a look at our daily expenditure on food and how we can cut down without losing out on nutrients, if we could all eat healthy foods for less we could make our budgets stretch further on a monthly basis.
Here are some tasty recipes all for less than 1 pound per serving.

Oh My God Dinner
1/4 large courgette
1/4 red/yellow pepper
35g cooking bacon
100g spaghetti
mint
thyme
5ml lemon juice
50g peas
10g value Brie
1 garlic clove

Mushroom and pea risotto
75g mushrooms
1 small onion
1 garlic clove
oil
thyme
parsley
50g plain rice
1 stock cube
hard cheese shavings

Carrot, kidney bean and cumin burgers
1/2 medium carrot
1 small onion
2 sprigs coriander
1/2tsp ground cumin
1/4 can kidney beans
oil
1/2tbsp flour
For garnish
2tbsp mayo
1/2 iceberg lettuce leaf
1tbsp mango chutney
2 buns

Lentil and tomato curry
45g lentils
1/4 tin chopped tomatoes
1/2 Maris Piper potato
oil
1/2 small onion
celery stick
1/2tbsp curry powder
1/2tsp cumin
stock cube
1 garlic clove
1 pitta
4tbsp Greek yoghurt
2tbsp coriander

Italian white bean, kale and pasta soup
50g white beans
25g kale
25g conchiglie pasta
10g anchovies
1 stock cube
rosemary
